- 3 (8-oz.) blocks cream cheese, softened
- 1 (15-oz.) can pumpkin puree
- 4 large eggs
- 3/4 c. granulated sugar
- 1/2 c. packed brown sugar
- 1/4 c. sour cream
- 2 tsp. pure vanilla extract
- 2 tbsp. all-purpose flour
- 1 tsp. pumpkin pie spice
- 1/2 tsp. ground cinnamon
- 1/4 tsp. kosher salt
- FOR THE OREO CRUST
- 24 whole Oreos
- 6 tbsp. melted butter
- FOR SERVING
- 1/4 c. chocolate chips, melted
- 1/4 c. caramel sauce
- Whipped topping
DIRECTIONS
- Preheat oven to 350º and position an oven rack in the middle of the oven.
- Make cheesecake: In a large bowl using a hand mixer or in the bowl of a stand mixer using the paddle attachment, beat cream cheese until smooth. Add pumpkin pure, eggs, sugars, sour cream, vanilla, flour, pumpkin pie spice, cinnamon, and salt and beat until combined and no clumps remain. Set aside.
